Melt the butter, stir in the flour, thin little by little with the milk, bring to the boil; take off the heat.
Stir in the cooked, cleaned fish, the mace, pepper, the egg yolks, and the whisked egg whites.
Put in a greased dish, sprinkle with the crushed rusk and bake in a good hot oven for ¾ hour. Serve with creamed butter or melted butter.
Cod or haddock is best for this, but other fish can also be used; leftovers of fish balls and cooked macaroni can be added.
