The fish — haddock, cod or halibut — is freed of skin and bones, cut into pieces, which are coated in lightly salted milk and rusk mixed with salt and pepper, browned in the lightly browned butter, and layered in a dish or ovenproof dish with the thinly sliced lemon slices or pickled cucumber.
Sauce: Stir the flour into 60 g browned butter, thin little by little with the fish stock, let it simmer a few minutes, add cayenne, pour the sauce over the fish. Bake in the oven about ½ hour.
The fish may also be coated in breadcrumbs and placed raw in the dish, layered with tomato slices, pepper, salt and finely chopped parsley, with 1-2 dl sour cream added. Bake in the oven ¾ hour.
