Original 1943 recipe

Mussels must be live and fresh; they are then closed and should feel heavy. Keep them cold, preferably on ice, until they are to be served.
Place them in a large tub without water. Scrape each one well with a knife until the shells are clean, then pour on cold water and stir constantly so the mussels do not open. Change the water until the last is clear.
Then boil them in 2 dl water with a little dill and a couple of peppercorns for 50 mussels. Boil covered for 2 min., turn them and boil again.
When they open after approx. 6 min. they are done. Take them out of the shell at once. Save the stock.
