The cod is fully cleaned, washed well, cut into two-finger-thick slices with a sharp knife dipped in salt; washed again in strong salt water; laid out on a platter — preferably a perforated platter — covered with a fish cloth until it is to be boiled.
Put over the fire in the boiling, salted water; when the water comes back to the boil, add a little cold water to stop the boiling.
Put the head and tail into the pot first, then the middle pieces.
Boil the innards in a separate pot in boiling, salted water, 1 tablespoon per litre. The cod head should preferably also be boiled separately.
The cod is served at once.
