Scale the fish, clean it thoroughly, and wash it well in several changes of cold water; sprinkle with a little salt.
Cut into finger-thick slices and place over the heat in the boiling, salted water with the lemon. The scum must be removed immediately, as it gathers on the surface.
The piece of salmon may also be cooked whole; it then simmers gently in the nearly boiling water for 0.5–1 hour depending on the size of the fish.
Serve with parsley butter, hollandaise sauce, or caper sauce. Cucumber salad.
Cold poached salmon is served with horseradish sauce. As a rule, leftovers of the poached salmon are used for this; it is then set aside in the stock and served very cold. In that case the fish stock must not be salted so heavily; for 2 l water, 0.5 dl salt.
