The eel is skinned as explained above, cut open along the back, and the entrails are removed; the eel is washed well and dried, and rubbed with the salt.
Then roll it up tightly from the head, and tie it round with string. Put on the heat in the salted warm water with seasonings and the vinegar; boil over low heat until it is done, and cool completely.
When the fish stock is cold and the fat has been skimmed off, add 10 sheets of gelatine and 2 unwhisked egg whites and cleaned, crushed eggshells. Boil for 5 min., strain.
Pour a little of the aspic into a moistened ring mould or onto a flat dish to set, cut the roulade into slices, which are placed on the set aspic, and pour more aspic over.
Separate the slices when everything is quite firm; there should be a little aspic around each piece of fish; arrange them around a dish and garnish with dill or parsley and grated horseradish.
