Divide the boiled lobster and pick the meat from the shells; remove the "pope", which sits just behind the eyes, as well as the intestinal vein.
Melt the butter, stir in the flour, thin little by little with the milk or cream and bring to a boil; let the cut-up lobster come to a boil in the sauce.
Lift the pot off the heat and add cayenne, sugar and salt to taste.
If there is roe, mash it completely fine with a little butter and add it to the sauce together with the milk, or a little lobster colouring may be added.
