Into the skinned, boned, minced fish, stir the lemon juice and paprika.
Melt the butter, stir in the flour, thin with the milk, bring to a boil, take off the heat, and stir in the fish and half of the finely chopped parsley.
When the mixture is quite cold, shape it into slightly pointed cakes, turn them in egg white, then in rusk mixed with the rest of the parsley; stick a small piece of uncooked macaroni into the pointed end of each cake, and cook them golden-brown in the lard.
Serve them propped against a border of potato on a round dish, with tartare sauce in the centre.
