Clean the fish of skin and bones.
Whisk the fish stock, vinegar, peppercorns and bay leaf, the crushed eggshells, the unbeaten egg whites, the coloring and the gelatin (rinsed in cold water and snipped up) together cold in an enameled pot, simmer for 5 minutes, and take off the heat; place a lid on the pot, and let the aspic stand to clarify for 1/4 hour; strain carefully through the straining cloth.
Rinse a flat mold with cold water. Pour in 1 to 2 tablespoons of aspic. When it has set, arrange in the mold, as garnish, lemon slices, cucumber slices, capers, finely chopped parsley, and boiled, cut-up carrots or white roots.
Pour a very little aspic over again to fix the garnish, and when this has set, lay in the fish; pour on aspic, first roughly level with the fish, then fill the dish full.
This dish is best made the day before it is to be used, and can then be turned out onto a dish.
