Cut off the shank. The roast is washed in lukewarm water, the thin skin may be peeled off, and it is larded by making small holes in the meat with a small pointed knife and filling these with the washed, dry parsley.
The roast is placed in a hot pan and set in the strongly heated oven; when it begins to brown, sprinkle on a little salt and pour over half of the boiling water. Add the rest later.
Baste often, roast 1½—2 hours.
For the sauce, brown the butter and flour well, thin with the strained, skimmed juices, bring to a boil, add salt to taste.
