Roast mutton from 1900: a leg of mutton is skinned, larded with parsley, salted and oven-roasted for 1–2 hours with boiling water in the pan and diligent basting; served with a brown sauce of butter, flour and strained roasting juices.

Prepare the roast
Wash the leg of mutton in lukewarm water and peel off the thin skin. Lard the roast with washed parsley.
Roast in the oven
Place the roast in a pan, sprinkle over salt and pour on 1 litre of boiling water. Put it in a well-heated oven, baste often and roast for 1–2 hours.
Make the sauce
Brown the butter, stir in the flour and let it down with the strained, skimmed juices. Bring to a boil and season with salt.
On saddle of mutton
Saddle of mutton is roasted the same way as saddle of veal.
