The apples are washed and crushed or ground into a coarse mash. The mash is poured into a press lined with berry cloth, and a jar collects the juice as it comes.
The juice is not clear now and is difficult to filter, but there are aids such as filtragol, tannic acid or gelatine.
Leave until the next morning, and with a rubber hose draw the juice off from the sediment. Now add pure asbestos no. 5 — 50 g for 60–70 litres.
The juice is put into sealed bottles which are immediately sterilised to 70° for 10 min. The bottles are placed in a basket with wool blankets for a few hours before they are sealed with wax.
Other berries, rowanberries and rhubarb can be treated in the same way.
