The rose hips are placed in cold water, left overnight and cooked in the soaking water. Reckon on about ¾ liter of water.
Reckon on one large apple or two smaller ones per person. If you peel the apples, the peel must be cooked with the rose hips; when everything is tender, it is rubbed through a hair sieve.
The apples are steamed tender in very little sugar and water; this juice is mixed with the rose hips, and if the rose hip sauce is too thin, it is thickened with a potato starch slurry.
The apples are placed in a ring on the slightly deep serving dish, and the sauce is poured into the middle.
