The bone from the roast venison saddle is cracked into many pieces and put on in 2.5 litres of water.
When this comes to a boil, skim it, and add a leek, 5 cloves, a small bay leaf, well-washed apple peelings and a child's spoonful of salt.
Simmer under a lid until barely 2 litres remain. Strain the stock.
Butter and a heaped spoonful of flour are blended smooth in the pot and thinned with the strained stock. The soup must boil for a few minutes, is poured into a tureen and seasoned to taste with vinegar and sugar.
Apple slices, blanched in water, are served in the soup either with or without dumplings.
