1 litre of Victoria peas are washed and boiled tender in 3 to 4 litres of water; a small washed and cleaned onion is also boiled in.
The peas are strained through a coarse sieve, so the skins are left in it. Then now and then ladle a little warm water over to get everything well out of the peas, which must be stirred well with a spoon in the sieve.
In a pot you have a good slice of butter. Into it stir a full tablespoon of wheat flour. Then thin with the pea stock.
A little pepper and salt in the soup, plus quite a little sugar.
If it is well prepared, it is extra good, and no one will then believe anything but that there is meat stock in it. This soup alongside pancakes is a good and nourishing dish for dinner.
