Clean the cauliflower and put it over the heat in the boiling, salted water together with the leek and the celeriac.
When the cauliflower is well half-tender, take it up; divide 1–1½ head into small florets.
Return the rest of the cauliflower and the stalks to the pot to cook out completely; rub them through a colander or purée press.
Melt half of the butter, stir in the flour, thin with the cauliflower water, add the half-cooked florets; the soup cooks on until these are tender.
Thicken the soup with the egg yolks, whisked with the cream and the rest of the cold butter, cut into small pieces. Salt to taste.
