A strong, clear soup is made from 4 carrots, 2 red onions, 2 celeriac, 3 leeks with tops, 1 to 2 above-ground kohlrabi, 2 parsnip roots, 2 parsley roots, 1 bunch of parsley, a few radishes and 1 small beetroot, plus 4 potatoes and, if you wish, 2 heads of lettuce, 2 handfuls of asparagus and 1 litre of Jerusalem artichokes, which last give a good flavour. Green peas and some cut-up mangetout pods also give an excellent flavour.
All the roots must be well scraped and rinsed and cut into pieces. They are placed in a pot, set over the fire in cold water with a little salt and boiled slowly until the roots are tender.
Then the soup is strained and used either clear with the roots and flour dumplings in it, or it is used as a stock for other soups and for sauces.
