2 litres of skimmed milk are boiled up and poured off.
In a pot, whisk 5 to 6 tablespoons of wheat flour into 1 litre of buttermilk or sour milk.
Then set the pot over the heat, and stir it strongly the whole time until it comes to a boil; then thin little by little with the boiled milk until the soup becomes suitably thick.
If you want the soup really good, whisk a few tablespoons of sour or sweet cream into the tureen into which the soup is to be poured. It is seasoned with a little sugar and salt.
Many people make buttermilk soup by mixing the buttermilk and milk together before adding the flour, but then it takes longer before the soup comes to a boil again, and besides it will curdle more easily that way.
