First clean the greens so all debris is removed, then wash them in a couple of changes of water. The caraway greens need not be blanched until they have grown old and large-leaved. Chop them very fine, almost as fine as coarse groat meal.
In a pot melt a good slice of butter, enough to stir in 3 to 4 tablespoons of wheat flour; work this together with a whisk.
Pour in, little by little, 1 litre of good fresh meat stock and about 1/8 litre of chopped greens. Let all this boil, stirring, for 5 minutes.
Then thin again with 2 litres of stock, or enough to make the soup suitably thick. If the broth is not salted enough, salt the soup.
Poached eggs (eggs broken open and cooked in water) are served alongside the soup.
