Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Raspberry cordial from Erken & Steen (1900): berries and water brought to a boil, strained and left until the next day; the juice boiled with ½ kg sugar per litre for half an hour, skimmed and bottled.

Bringebærsaft var en av de mest verdsatte husholdningssaftene og ble drukket utrørt i vann eller brukt i desserter. Oppskriften er hentet ordrett fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Sukker og lakkforsegling ga holdbarhet. 1900-tallets metoder gir ikke samme sikkerhet som moderne konservering; bruk sterile flasker og oppbevar kjølig.
Bring berries and water to a boil
Put the raspberries and water in a pot. Bring to a boil while stirring.
Strain and let stand
Strain the mixture. Let the juice stand until the next day, then measure it.
Boil with sugar
Allow ½ kg sugar per litre of juice. Set over high heat, stir well and boil for half an hour while skimming thoroughly.
Bottle and seal
Fill the juice into bottles, cork and wax-seal them. Store cool and dark.
