Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Mixed fruit compote from 1900: 1.5 kg each of apples, pears and plums, 2.5 kg sugar, ¾ l water. The fruit is cooked in turn in sugar syrup, the syrup is reduced, everything is combined and filled into jars. From Erken & Caroline Steen.

Blandet kompott fra Erken og Caroline Steen (1900) er en høstkonservering som utnytter epler, pærer og plommer i samme glass. Fruktene kokes hver for seg fordi de blir møre i ulikt tempo – en gjennomtenkt teknikk for å bevare form og bitt. Sukkerlaken kokes til slutt inn til en klar sirup.
Prepare the fruit
Peel the apples and pears and cut them into 4–8 pieces depending on size. Remove the stones from the plums.
Make the sugar syrup
Boil the sugar and water until the syrup is clear and skimmed.
Cook the fruit in turn
First cook the apples until just tender and lift them out. Do the same with the pears, and finally the plums, which only get a single boil.
Reduce and combine
Reduce the syrup for ¼ hour and skim. Return all the fruit to the pot, bring to a boil, fill into dry, warm jars and tie shut when cold.
