Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Blueberry and gooseberry cordial and jam from 1900: 7 l blueberries, 7 l gooseberries, 3 kg sugar, 7 l water, cinnamon and cloves boiled ½ hour, strained in a wool bag. The juice is bottled, the remaining pulp is boiled up again into jam for pancakes. From Erken & Caroline Steen.

Denne dobbeltoppskriften fra Erken og Caroline Steen (1900) utnytter bæravlingen fullt ut: den tynne saften tappes på flasker, mens restmassen blir til et krydret syltetøy anbefalt til pannekaker. Kombinasjonen av søte blåbær og syrlige stikkelsbær, smaksatt med kanel og nellik, er typisk for tidas norske bærkonservering.
Clean the berries
Clean and top and tail the blueberries and gooseberries.
Boil together
Boil everything (berries, sugar, water, cinnamon and cloves) together for ½ hour.
Strain the juice
Pour the mixture into a wool bag (or straining cloth) and let most of the juice drain off.
Fill cordial and jam
Fill the juice warm into clean bottles. Give the remaining pulp another boil, fill into jars and tie shut once cold. The thick part is best suited to pancakes.
