The cleaned cauliflower head is boiled barely tender and cooled in the stock.
A roux is cooked from butter, flour and milk. When it comes away from the pan, it is taken up into a bowl, the egg yolks are stirred in one by one, and finally the stiffly whipped egg whites are added, salt to taste.
A ring mould is greased well and dusted with crushed, sifted rusk.
The batter fills the mould 0.75 of the way up, the boiled cauliflower head is divided into small florets and distributed around in the batter.
The mould is placed in a pan of water that must reach only halfway up the mould, a lid is placed over the mould and one over the pot.
If the batter rises up to the lid, it is removed. Cook about 0.5 hour.
Turn out, and freshly boiled cauliflower or other vegetables are placed in the middle. Tomato sauce is poured over, or creamed butter is served alongside together with grated cheese.
