Strain the blood and whisk it in a pot together with the water and half of the rye flour.
Put the pot over the heat and add enough more rye flour to make a thick porridge.
Stir in the cold butter, the finely chopped suet, the egg yolks, the spices and the milk.
Fold in the stiffly whipped egg whites last. Pour the batter at once into a greased, crumb-coated mould and cook in a water bath for 1.5 hours.
Serve with melted butter and lingonberry jam.
If you want to make the blood pudding more simply, leave out the eggs and milk, but then the pudding will naturally not be as light.
