The grains are soaked in cold water overnight, given a boil-up in fresh water. Poured into a dish, cooled.
The strained blood, the crushed rusks, the finely cut kidney suet, the cleaned raisins and the spices are added.
Stuffed into casings, which must only be 0.75 full.
When the water boils very gently, the sausages are put in, boil for 5 min., taken out. Pricked with a darning needle, simmered again for about 20 min.
Served with melted butter.
