Original 1941 recipe

Surely many still have some of the old crisis flour left, and they should eke it out with the new; if it is only the new, it may perhaps need to dry a little.
Work the dough as usual for a yeast dough, really well. It can stand overnight or not, as you wish, but must in any case stand for about 4 hours.
Knead it up, using preferably the old bread flour for this; place the loaves in greased tins and let rise for one hour.
Put in a hot oven. After a good half hour of baking, turn them out of the tins and put them back in on a tray and bake for 20-25 minutes.
