Buy beef as for braised beef slices, pound it well, add salt, a little pepper, ginger, flour, finely cut onion and, if you like, a little fat on each piece, roll them up and lay them in the bottom of an enamelled dish that has only been rinsed first.
The bottom is covered with the meat; on top lay potatoes, which must be peeled and ready first, and pour on water until it stands well above the layer of meat.
A puff pastry is made of flour and butter (or fat and lard). Cut the pastry larger than the dish, lay it over the potatoes and fold it firmly down around the rim of the dish, pressing it down with a fork. Prick a few holes in the pastry.
Put the dish into a hot oven. It is done when the pastry is nicely browned.
Serve in the dish with a napkin wrapped around it.
