The head is washed and treated as for pressed head cheese, laid 14 days in sugar brine, taken up, parboiled in boiling water and given a brisk smoke.
Boil until the bones loosen, take up, pour cold water over.
When the head is quite cold, the rind is cut into square diamonds, and into each of the white diamonds a small square piece of truffle is inserted.
With this is served a cold sauce, made from redcurrant jelly, 1 teaspoon mustard and juice of lemon to taste.
