Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Beaf-the (beef tea) from 1900, the invalid-food chapter: scraped meat is steeped with cold water and salt, cooked 4 hours in a water bath in a jar, strained and skimmed. Served without boiling when reheated. Historic invalid food, not medical advice.

VIKTIG: Fra kapittelet «Sygeværelse» (sykemat) i «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Dette er historiske tekster, IKKE medisinske råd. «Beaf-the» (beef tea) var en næringsrik, klar kjøttkraft trukket ved lav varme i vannbad, ansett som styrkende sykekost. Fremgangsmåten fortsetter fra side 319 til øverst på side 320 (halen er hentet med).
Prepare the meat
Wash the meat with a damp cloth and scrape it with a sharp knife. Place it in a jar.
Add water and salt
Add the cold water and the salt a little at a time, stirring often with a fork. Let stand 1/2–1 hour.
Cook in a water bath
Set the jar in a pot of boiling water so the water reaches halfway up the jar. Cook for 4 hours and stir now and then.
Strain and skim
Strain the broth and remove the fat.
When reheating
If the broth is to be reheated, it must not boil.
