Apricots are covered with a sugar brine boiled from 500 g of sugar and 1 l of water, sterilized 20 minutes at 90°. Peel the fruit with a horn knife.
The fruit is placed in a hair sieve, dipped for a moment in boiling water and immediately again in ice-cold water. The fruit may be halved or not, as you wish.
A few scalded kernels in each jar do good; the kernels should be covered or hidden by the fruit laid down.
Pears are peeled with a horn knife or silver knife. Place them at once in cold water with a few drops of citric acid, covered so the air cannot reach them.
Place in jars whole with the stem scraped clean or split in two. Sugar solution boiled from 400–600 g of sugar per litre of water is poured over. Sterilize 30 min. at 90°.
Apples are treated the same way as pears. Sterilize 20 min. at 90°.
Everything is re-sterilized within 24 hours at 85° for 15 min.
