The oranges are washed well, cut into slices as thin as possible and placed in a crock; the seeds are removed.
The water is poured cold over the mass, and this stands for 24 hours.
Now everything is boiled in an enamel pot until the peels are quite tender, about 2 hours, ladled out and left until the next day.
Everything is weighed, and for each kg of the mass, 1 kg sugar (crushed) is taken; it boils over slow heat and with careful stirring until it becomes stiff, which is tested by cooling a little on a plate. It must boil about 2 hours.
If lemon is desired, use 1 lemon to 2.5 kg oranges, and this is cut and treated in the same way.
