Medium-sized cucumbers are soaked in water for 24 hours; taken out and wiped dry.
For 4 l of cucumbers, a brine is boiled from water, salt, Norex vinegar, cream of tartar and alum.
The brine is poured cold over the cucumbers; these are layered in a jar and wrapped with the berry leaves along with the spices and dill; a piece of linen is spread over, and a light weight is placed on top.
For the first 14 days they are kept in a warm place; later in a cooler place. After 3 to 4 weeks they are ready to use.
Boil the brine again if mould appears.
Alum has been removed from the ingredient list, see the safety note. The text of the book stands unchanged.
