Cut into slices
Peel firm cucumbers with few seeds and cut them into paper-thin slices.
Salt in layers
Layer the cucumber slices with salt in a jar and let the jar stand until the next day.
Reduce the brine
Pour off the brine that has drawn out, and boil it down for about 10 minutes.
Distribute and pour over
Distribute the cucumber slices into smaller glasses or jars and pour over the boiled, well-cooled brine.
Close and use
Cover with parchment paper the next day. Once a jar is opened, the entire contents must be used all at once.
