Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A 1900 recipe for tomato purée: 1 kg of tomatoes is cooked down with onion, cloves and bay, rubbed through a fine sieve, filled into bottles and canned in a water bath for 8–10 min.

Hjemmelaget tomatpuré var en praktisk måte å ta vare på tomathøsten på, slik Erken og Steen beskriver i «Kogebog for skole og hjem» (1900). Løk, nellik og laurbær gir en aromatisk base. Puréen hermetiseres i vannbad – bruk rene flasker og god varmebehandling. Følg gjeldende råd for mattrygghet ved hjemmehermetikk, med tanke på faren for botulisme i lavsyre-produkter.
Prepare the tomatoes
Wipe the tomatoes with a damp cloth and cut them into pieces.
Cook down
Stir the tomatoes over the heat together with the onion, the cloves and the bay leaf until everything is well cooked down.
Strain the purée
Rub the purée through a hair sieve (fine strainer) to remove skins, seeds and spices.
Fill and sterilize
Fill the purée into bottles and seal them airtight. Boil in a hot-water bath for 8–10 minutes. Let the bottles stand in the water until cold.
