Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Water bath (canning) from Erken & Steen 1900: well-sealed jars are placed in a flat cooking vessel with hay or a cloth between the jars to keep them from knocking together, and the pot is filled with water up to ¾ of the way up the jars (unless the recipe says otherwise) before boiling. A general preserving method used for vegetables and fruit.

Fra «Kogebog for skole og hjem» av Henriette Schønberg Erken og Caroline Steen (1900), falt i det fri. Dette er ikke en matoppskrift, men en grunnleggende konserveringsmetode: hermetisering i vannbad. Glassene med grønnsaker eller frukt varmebehandles nedsenket i vann for å drepe mikroorganismer og skape et lufttett, holdbart innhold. Den beskrives innledningsvis i kapittelet «Grønsager» og henvises til i flere av kapitlets oppskrifter.
Place the jars in the vessel
Place the well-sealed jars in a preferably flat cooking vessel. Put hay or a cloth between the jars so they don't knock together during boiling.
Add water
Fill the pot with water until it stands ¾ of the way up the jars – unless the individual recipe says otherwise.
Boil according to the recipe
Boil the jars in the water bath for the time the relevant preserving recipe specifies.
