Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Apple soup: apples cooked soft under a lid in water, rubbed through a colander, thickened with potato starch and seasoned with lemon juice and sugar. Served with rusks. From Erken & Steen's "Kogebog for skole og hjem" (1900).

Eplesuppe var en typisk høstrett i norske hjem, laget av rikelig med sesongens epler. Den friske sitronsaften balanserte epenes sødme. Oppskriften er hentet fra Henriette Schønberg Erken og Caroline Steens «Kogebog for skole og hjem» (1900).
Cook the apples soft
Wash the apples and cut them into pieces. Cook them under a lid in the water until they are so soft they can be rubbed through a colander.
Strain the soup
Rub the cooked apples through a colander or a sieve and put the soup back over the heat. Bring it to a boil.
Thicken the soup
Stir the potato starch out in 2 dl cold water and whisk it into the soup. Bring it to a boil once more.
Season and serve
Add the juice of ½ lemon and sugar to taste. Serve the soup with rusks.
