Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Wienerschnitzel from 1900: finger-thick slices of veal breaded in egg and rusk, fried light brown in butter, garnished with a lemon slice, a rolled anchovy and capers; served with pan juices reduced in meat stock and sherry.

Denne norske versjonen fra 1900 pynter den panerte kalveschnitzelen på wiensk vis med sitron, ansjos og kapers – den såkalte «Holstein»-garnityren. Fra Erken & Caroline Steens «Kogebog for skole og hjem».
Cut and season
Cut the veal, preferably from the leg or loin, into slices a good finger thick. Sprinkle over mixed salt and pepper.
Bread and fry
Turn the slices in egg and ground rusk, and fry them light brown in the browned butter.
Garnish each schnitzel
Place a thin slice of lemon on each piece. On the lemon place half a cleaned, tightly rolled anchovy, and around it 4 capers.
Make the sauce
Reduce the pan juices with the meat stock for 5 minutes. Add the sherry and pour the sauce over the serving dish.
