Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

German lapskaus (1900 edition, p. 159): leftovers of roast and meat in cubes are browned in butter with potatoes and onion; cabbage, carrots and celeriac are boiled in salted water for ½ hour; meat and gravy are added and everything cooked until suitably thick. A leftovers dish.

En tysk-inspirert lapskaus fra «Kogebog for skole og hjem» (1900), tenkt som en resterett der stekt kjøtt og stekesaus fra tidligere måltider brukes opp sammen med rotgrønnsaker og kål.
Brown meat and potatoes
Cut leftovers of roast and other meat into cubes and brown them in the butter together with the cut-up potatoes and onion.
Boil the vegetables
Cut up the cleaned vegetables (cabbage, carrots, celeriac) and boil them for ½ hour in salted water.
Combine the dish
Add the browned meat to the vegetables together with the gravy, and let everything cook until suitably thick.
