Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Warm, frothy wine sauce from 1900: 5 egg yolks whisked with 100 g sugar, lemon juice, grated lemon zest and 4 dl white wine (graves) added, whisked over heat to the boiling point without boiling, strained.

Skummende varm vinsaus (sabayon/zabaglione-type) fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Serveres til puddinger og desserter. Originalen bruker graves, en tørr hvitvin fra Bordeaux.
Whisk egg and sugar
Whisk the egg yolks airy together with the sugar.
Add lemon and wine
Add the juice and grated zest of the lemon along with the white wine.
Whisk over heat
Whisk the mixture over low heat, preferably in a water bath, until it thickens and reaches the boiling point. Do not let it boil. Take the pot off the heat and strain the sauce before serving.
«4 dcl. graves» er modernisert til 4 dl hvitvin med graves oppgitt som opprinnelig vintype. «men maa ikke koge» er beholdt som advarsel mot at egget skiller seg. Vannbad er foreslått som sikring i moderne kjøkken.
