Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Egg-based vanilla sauce from 1900: 5 dl milk boiled with a vanilla pod, 5 egg yolks stirred with 100 g sugar, thinned with milk and heated to the boiling point without boiling.

Klassisk eggebasert vaniljesaus (creme anglaise) fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Serveres til puddinger, fromasjer og frukt.
Boil milk with vanilla
Split the vanilla pod lengthwise, scrape out the seeds and put both seeds and pod into the milk. Bring the milk to a boil.
Stir egg yolks and sugar
Stir the egg yolks well together with the sugar into a light, airy mass. Thin with a little of the boiling milk while stirring.
Thicken the sauce
Combine everything in the pot and heat gently while whisking constantly until the sauce reaches the boiling point. Do not let it boil, or the egg will separate. Remove the vanilla pod before serving.
Melmålet ½ liter er oppgitt som 5 dl. Vaniljestang er beholdt, med vaniljesukker som moderne alternativ. Fremgangsmåten er ellers upphavelig; «vispes til kogepunktet, men maa ikke koge» er tydeliggjort som en advarsel mot at egget skiller seg.
