The berries are pounded in a mortar or ground once, then the cold water and the tartaric acid, dissolved in 2 dl water, are added; stir well.
The mixture stands for 2 days, stirred now and then. Pour into a straining bag overnight.
The juice is weighed and about ½ its weight, or preferably less, of sugar is added; stir for 1½ hours without stopping.
Leave for ½ hour, skim if anything floats to the top. Fill into bottles, cork.
When the drink is to be used, add 3 l of water to 1 l of lingonberry drink.
The pulp in the straining bag is brought to a boil with 400 g of sugar per kg of pulp, put into a jar and tied up; or it can be mixed with boiled carrots (see lingonberry mash).
