Clean the fish but do not wash it; sprinkle it with salt and sugar, place a light weight on it, and let it lie for 2 days; then cut it up and wash it as usual.
Put it into boiling water and serve with melted butter with finely chopped hard-boiled egg, and with boiled carrots, slices of swede, and parsley.
If you want good salt fish, it is best to salt it yourself. Use a mixture of salt and sugar, 3 large spoonfuls of salt to 1 spoonful of sugar. It can then be cooked after 2 days. If it is left much longer, it must be soaked.
