Cut fresh tomatoes into quarters, press out the seeds, and set the tomatoes over low heat and cook them until they can easily be rubbed through the purée sieve.
Peel potatoes and boil them tender, then rub them through, and take as much potato mash as you have tomato mash, and mix together.
Cut onion into small cubes, fry light brown in butter and stir into the tomato mixture together with salt and ground pepper to taste.
Grease a tart mould or small porcelain moulds with butter, fill in the mixture, sprinkle over crushed rusks, grated Parmesan cheese and butter, set the moulds in the oven, and bake them light brown.
This dish can be served on its own or as a side dish to various meat dishes.
