Original 1943 recipe

Wash and scrape the trotters and place them in cold water for 2 to 3 days; change the water every day.
Put over the fire in boiling, salted water; 1 teaspoon salt per liter of water. Boil until completely tender.
Rinse in cold water, split in two lengthwise and place in the pickling brine when they are completely cold.
Can be served after 2 to 3 days; if they are left longer they must be soaked for a couple of hours.
