Rub the neatly trimmed ham with a mixture of 1 tablespoon saltpetre and 3 tablespoons salt, and let it rest for 1 day.
Bring the beer, salt, saltpetre and sugar to a boil together and pour cold over the ham, which has been placed in a trough or deep dish.
Turn the ham in the brine daily for 3 weeks.
After this time, take it out, wipe it dry, hang it to dry for 3 days, and smoke it in cold smoke.
When it is to be used, wash and brush it well, then put it over the heat in boiling water. Let it simmer for 3–5 hours; if it simmers gently, it becomes juicy and tender, but if it boils vigorously, it becomes dry and stringy.
When it is done, lift the pot off the heat and leave the ham to rest in the stock under a lid for ½ hour.
Peel the rind off carefully, leaving about a quarter at the bottom near the bone; here the edge is cut or clipped into pointed, slightly rounded tongues. Decorate the bone with a paper frill.
The ham can be sugared and glazed by sprinkling a layer of sugar over it — about 200 g — and passing a glowing, absolutely clean fire tongs or fire shovel over the sugar.
If the ham is to be served warm, cut it into thin slices and place various vegetables alongside; if the ham is only to be used cold, it should be returned to some of the stock each time it is used; this is done so that it stays juicy.
