Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Spiral cake (rolled sponge cake) from Erken & Steen 1900: an airy sponge of eggs, sugar, flour, baking soda, cream of tartar and almond extract is baked on a sheet, spread with jam and rolled. Cut into slices. Serves about 8.

En tidlig norsk rullekake fra Erken og Steens «Kogebog for skole og hjem» (1900). Kombinasjonen natron og kremortartari virket som datidens bakepulver og ga den luftige sukkerbrødsbunnen.
Whisk eggs and sugar
Whisk the eggs and sugar airy and pale – in the original for ¾ hour; with an electric whisk 8-10 minutes is enough.
Fold in flour
Add the almond extract and the sifted flour mixed with baking soda and cream of tartar. Fold gently together.
Bake the sheet
Spread the batter over a well-greased baking sheet and bake for 10-15 minutes.
Fill and roll
Cut the cake in half, spread jam over it and roll up.
Slice and serve
When the roll is cold, cut it into finger-thick slices. Serve with or without whipped cream.
