The salsify roots, which should be long, even, dark, but white and juicy inside and preferably crisp, are washed, scraped, cut into 4 cm long pieces and placed, one by one so they do not darken, into 1 l of cold water in which you have stirred 1 spoon of vinegar and 1 spoon of wheat flour.
Put the roots over the heat in 0.5 l of boiling water containing salt and sugar, and boil them tender.
Melt the butter, stir in the flour, and thin with the cream or milk. Give the roots a boil in the sauce.
The roots can also be boiled unpeeled, peeled once cooked, and placed straight into the finished sauce.
