The firmer the sprouts, the better the cabbage. Brussels sprouts are available fresh throughout the winter, as they tolerate frost like kale does.
Cut the sprouts from the stalks, remove the outermost leaves and wash the sprouts; pour off the water.
Pour boiling water over the sprouts, drain it off again at once, and set the sprouts over the heat to steam until tender.
Take up at once and lay on a cloth. Keep warm.
Just before serving, stir in a good spoonful of butter and a pinch of pepper.
