Cut the boiled leeks lengthwise into 2-4 parts.
Stir the butter and flour together, thin with the milk, bring to a boil; salt to taste.
Take from the heat and stir in the egg yolks, and lastly the stiffly beaten egg whites.
In a greased ovenproof mould, first lay a little of the batter, then the boiled, cold leeks, and batter on top.
Bake in a hot oven for 0.5-3/4 hour. Serve at once with asparagus butter.
Instead of leek, boiled asparagus, cauliflower or other vegetables may be used.
