Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A puréed celeriac soup cooked on celeriac and meat broth, thickened with butter and flour and finished with a liaison of egg yolk and cream. From Erken and Steen 1900.

En fyldig, legert sellerisuppe fra Erken og Steens skolekokebok (1900). Legeringen med eggeplomme og fløte gir en silkemyk konsistens som var typisk for finere supper i tiden.
Cook the celeriac
Clean and cut up the celeriac. Boil it in the water until tender, then rub it through a sieve or colander into a purée.
Make the roux
Melt the butter, stir in the flour and thin little by little with the meat broth and the celeriac cooking water. Let the soup simmer for 10 minutes.
Finish with egg and cream
Take the pot off the heat. Stir the egg yolk together with the cream and gently stir the mixture into the soup without letting it boil afterwards.
